Salmon with Dill-Horseradish Sauce

Ingredients

 

2 (6 oz) portions of wild salmon

1/2 cup avocado mayo

3 T prepared horseradish, or more to taste

1/4 cup fresh dill, chopped, plus more for garnish

1/2 a shallot, thinly sliced

salt & fresh ground pepper

2 T extra-virgin olive oil, divided

juice of 1/2 lemon

Directions

 

Preheat oven to 400 degrees.

Combine mayo, horseradish, dill and shallots in small bowl. Season with salt & pepper to taste. Store sauce in the refrigerator until ready to use.

To prepare the fish, pat fillets dry with paper towel. Brush a rimmed baking sheet with 1 T olive oil, then place salmon fillets skin-side down on the baking sheet and brush each fillet with the remaining olive oil. Season with salt and pepper, then pour lemon juice over fillets.

Roast salmon for 8-10 minutes. Remove from oven and cool 5 minutes.

Transfer salmon to plates and generously pour the horseradish sauce over the top and garnish with more dill.
